
Thank goodness it is peak orange season. We love this toast made with the very best citrus we can find at the market, in our case: blood oranges and mango oranges. The fruit is best if you carefully slice the peel off to remove every bit of pith. Cut into rounds and layered atop Bellweather Farms basket ricotta and dressed generously with Graza "Drizzle" olive oil.
This bright acid of the fruit is a perfect counterpoint to the richness of the cheese. And the green herbal notes from the olive oil have us almost believing it's Summertime.
Toast two slices of rustic bread in a pan with olive oil.
Spread with ricotta.
Layer peeled and sliced oranges.
Drizzle with honey and good olive oil.
Top with big, flaky sea salt.
Ascend to the heavens.
